Cooking with Locals: Fez Kitchen Experience

★ 4.9 Half day · ≈ 5 h Fez Private · riad pickup Traveler favorite

About this experience

This is a morning in a working Fassi household, not a demonstration kitchen. You meet your host at your riad and walk into the Medina while the souk is still being set up — the stalls she has bought from for twenty years, the olive seller who keeps her preserved lemons aside, the spice merchant who will grind your ras el hanout while you wait.

Back in the house you cook rather than watch: layering the tagine in the right order, folding bread dough and carrying it to the neighbourhood ferran where the whole street’s loaves bake in one wood-fired oven. Your host explains why smen goes in early and saffron goes in late, and what separates a tagine that is merely good from one a Fassi grandmother would nod at.

Lunch is served on the rooftop, family style, with the Medina you shopped in spread out below. You leave with written recipes in English or French, a spice blend of your own, and the confidence to make all of it again at home.

Good to know

Do we really cook, or mostly watch?

You cook. Everyone has a board, a knife and a job — chopping, layering the tagine, kneading dough. Your host guides and corrects; she does not take over.

Is it suitable for vegetarians or vegans, or for allergies?

Yes, and it is one of the easiest kitchens in Morocco for it. Tell us when you book and the menu is built around vegetable tagine, zaalouk and lentils. Nut and gluten allergies are also manageable with notice.

Can children join?

Children are very welcome and usually love the bread. Under-12s pay half price, and your host will give them the kneading and the mint-tea pouring.

Is the kitchen air-conditioned?

Fassi houses stay cool through thick walls and a shaded courtyard rather than air conditioning; in July and August we start earlier and do the stove work in the coolest part of the house.

How much walking is involved?

About twenty minutes each way through the Medina, on flat but uneven cobbles. There are no long climbs.

Will there be other groups in the kitchen?

No. One household, one group per session — yours.

How does pickup work?

Your guide meets you at the door of your riad or hotel in Fez at 09:30 and walks you back at the end. If your riad sits deep in the Medina, we agree the nearest gate the day before so nobody waits in the wrong alley.

Is the price per person or per group?

€45 is per person, and it is the full price — guiding, entrance fees and transport inside the city are already included. Children under 12 are half price, and a single traveller is welcome at the same rate.

How do we book and pay?

Send your date and group size by WhatsApp. You get a written confirmation the same day, usually within a couple of hours. No deposit and no card details: you pay your guide in cash, in euros or dirhams, on the day.

What if we need to cancel?

Cancel free of charge up to 48 hours before the start time — a message is enough. Inside 48 hours we will still move you to another date whenever we can.
